SpicePan is a kitchen built around two things: spices and a single pan. Everything we publish starts from that idea – that flavour comes from how you treat your spices, not from a shopping list twenty items long.

We are tired of recipes that ask for ground spice bought three years ago and never tell you why the dish tastes flat. On this site we toast, bloom and grind our own blends, we weigh spices instead of eyeballing them, and we write down what changes when you do the same. Then we cook the dish in one pot, one skillet or one tray, because weeknight cooking should not require washing six things.

What you will find on SpicePan

  • Spice blends and masalas – garam masala, ras el hanout, five spice, berbere, zaatar, harissa, curry powder and pickling spice, with ratios by weight so a batch is repeatable.
  • One-pan cooking – skillets, sheet pans, casseroles and one-pot rice dishes where every step happens in the same vessel.
  • Technique guides – toasting, blooming in oil or ghee, tempering, dry versus wet spice, and when to add spices at each stage of a recipe.
  • Everyday recipes – weeknight dinners built from pantry staples, with realistic timings and substitutions that keep the dish honest.
  • Storage and freshness – how long whole and ground spice actually keeps, what kills aroma, and how to test whether a jar is still worth using.
  • Heat and balance – how to build a dish that is spicy rather than merely hot, and how to rescue one that has gone too far.

How we test

Each recipe is cooked at least twice before publication, and each blend is made in a real batch, not estimated. Weights in grams come first because volume measures of spice vary with grind fineness; teaspoon equivalents are given as a convenience. Where a step can be done wrong in a way that ruins the dish, we describe what wrong looks like.
